For anyone with the same need to set this up.
Following the instructions I first posted that sorts out the domino side.
Then you need to amend your BES server to point to the secondary address book in the ES domino domain............

Overview
An IBM Lotus Domino user's mailbox might not show up when a user is added through the BlackBerry Administration Service console, as the user's mailbox is located in a different IBM Lotus Domino Domain.
Environment
• BlackBerry® Enterprise Server 5.0 to 5.0 SP1 for IBM® Lotus® Domino®
Complete the following steps to add a user from a different IBM Lotus Domino Domain or contact list:
1. Under Servers and components, expand BlackBerry Solution Topology.
2. Click BlackBerry Domain.
3. Click Component View.
4. Click Email.
5. Choose Edit component (on the right).
6. Under Domino Server Name and Address Book Name, specify additional IBM Lotus Domino Server name and the contact list name from the secondary domain.
